Recipe: Parking Lot Guac

If you're planning a spring tailgate, a double order of our Gringo Guac is an essential addition to the party. Our version of a classic is loaded up with all the extra fixings you need to look like you've got your life together, but easy enough to prepare when you're a few beers deep.


Guac doesn't look super appetizing after it's been sitting for a while, so we recommend prepping all the ingredients at home and stirring it all together once you're back in the parking lot.



Serves: 4-5


Ingredients:

  • 3 large ripe avocados

  • 2-3 Tbsp. lime juice (1-2 limes)

  • 1/2 tsp. salt, plus more to taste

  • 1 large tomato, diced

  • 1/4 small white onion, diced

  • 1/2 jalapeno, finely chopped

  • 5 strawberries, finely chopped (optional)

  • 1/4 cup fresh corn

  • 1/4 cup cilantro, chopped

Directions:

  1. Pit and peel avocados and mash with a fork in a mixing bowl.

  2. Add salt and lime and mash again.

  3. Mix in tomato, onion, jalapeño, strawberries and corn.

  4. Add cilantro and give a good stir, adding more salt or lime to taste.

  5. Serve with a jumbo bag of tortilla chips.
